Chocolate Banana Breakfast Fritters

Chocolate Banana Breakfast Fritters  print version 
Makes: 8 triangle fritters
Days To Make: 1
Prep. TIme: 5 minutes
Total Time: 5 minute prep, 15 minutes baking -- serve hot

Dry Ingredients
1 cup all purpose gluten free mix
⅓ cup teff flour
1 ½ teaspoons baking powder
½ teaspoons baking soda
½ teaspoon Real Salt
1 teaspoon vanilla extract
¼ teaspoons freshly grated nutmeg
½ teaspoon ground cinnamon
⅓ cup 70% bittersweet organic fair trade chocolate chips

Wet Ingredients
2 ripe bananas pureed ( ⅔ cup)
⅓ cup milk kefir or buttermilk

8 teaspoons butter for cast iron pan

Instructions:
  • Adjust the oven rack to the lower-middle portion and preheat the oven to 450F
  • Preheat cast iron cornbread wedge pan on a burner set on low
  • In the work bowl of a food processor puree bananas, add vanilla and kefir.
  • Mix all dry ingredients together in a mixing bowl
  • Add wet ingredient to dry and stir just until combined
  • Add 1 teaspoon of butter to each cast iron wedge, spoon in ¼ cup of batter to each wedge evenly
  • Bake for 15 minutes and serve hot
  • Substitute with coconut oil and water kefir for dairy free and vegan
