When I have my gf starter, and begin Injera, whT do I use in place of barley flakes?

If you can handle gf oats they would work, or just put in more of the potato/sorghum mix in the same amount--or millet flour, soaked millet. Anything gf in the same amount will work.

Hi Sido -
My husband and I were in the class you just had at Market Kitchen for gluten free baking. We learned so much that I am still trying to sort it all out!
Question though: I am so much a beginner at gluten free baking that I don't know how to make a "simple" sourdough loaf of bread. You gave all of us a ball of sourdough starter, but I don't know what to do now! I can't find a recipe for something this simple on your page, and all of the other sites I visit to find a recipe don't do things the same. I want to keep with your teaching because it was wonderful.
Can you help me? We are REALLY wanting a gluten free sourdough loaf of bread!

Hi Terry,
I can relate to your need for a simple loaf of bread. First of all feed the starter so you can keep it going. 1 1/2 cups of the all purpose mix with sorghum and potato starch will keep it going nicely with some water made into the balls and kept in the fridge.

I'll post a recipe for a simple sourdough loaf using flour here soon, next day or so. I'm not ready to post using just grain yet, I'm still perfecting that method. Are you on FB? If so friend me Sidonie Maroon and we can exchange emails to make this easier.
